Delicious Strawberry Cheesecake!

Hi guys! I hope your having a great weekend! I made a lovely Strawberry Cheesecake in school and really enjoyed it. Today I will show you the recipe and ingredients you will need to make this amazing cheesecake!

For the ingredients you will need:

250g Digestive Biscuits
100g of butter
1 teaspoon of vanilla extract
600g cream cheese (Philadelphia)
100g icing sugar
284ml pot of double cream

For the toppings:
400g of strawberries
25g icing sugar
20cm cake tin (sandwich tin)

To make the strawberry cheesecake you will need to:
Grease the sandwich tin before you start to make the Cheesecake so it doesn't stick to the bottom of the cake tin! 

Weigh out 250g of digestive biscuits into a bowl and smash up the digestive biscuits! Make the biscuit pieces really small so your base is delicious!

Then you need to melt 100g of butter in a pan until it turns to liquid. Once you have finished melting the butter pour it into the bowl with the broken up digestive biscuits and mix.
put the mixture into a sandwich tin and spread it around equally. With a tablespoon flatten down the mixture! Then leave the mixture in the fridge for an hour!
Then you are going to make the topping for your Cheesecake! You are going to beat 600g of Philadelphia cream cheese, 100g of icing sugar and 1 teaspoon of vanilla extract in a bowl. If it helps don't add the icing sugar all at once, take your time! Put the whisk in the bowl and then mix. This will prevent the mixture from going everywhere.

You don't need to mix the ingredients too long, mix for about 1 to 2 minutes!! Whilst you are mixing slowly add the 284ml pot of double cream, and mix!
Take your biscuit crumbs out of the fridge, after 1 hour. Pour over the mixed ingredients; Philadelphia cream cheese,icing sugar, vanilla extract and cream! 
Then to make your cake look wonderful, wash and cut up some strawberries. Decorate your Cheesecake however you would like it! You can check mine out below!
