Making Mini Cheesecakes

Hope you are all good and had a great Christmas.
I know I have already done a blog about a cheesecake but I thought I would do another one showing you how to make these adorable mini cheesecakes which I think are perfect for any event or celebration!
The ingredients you will need:
100g of digestive biscuits - you may want to use more or less biscuits depending on how many mini cheesecakes you make.
100g of butter
600g of cream cheese
284ml pot of double cream
100g of icing sugar
1 teaspoon vanilla extract
Equipment you will need:
12 cupcake cases
cupcake tray
rolling pin
large bowl
whisk
The first thing you should always do when baking is wash your hands and make sure your work space is clean. Then you are going to put the cupcake cases onto the cupcake tray and using a small amount of butter lightly grease the cupcake cases.
In a large mixing bowl, you are going to add 100g of digestive biscuits (however, if you are making the mini cheesecakes for more than 12 people I would use more biscuits. Also, if you prefer a thick layer of biscuits you can use more than 100g). Using a rolling pin you are going to break up all the biscuits until they turn into crumbs. Then melt 100g of butter (I melt the butter in the microwave) and then add into the bowl with the biscuit crumbs and mix until the ingredients are combined together. Add an even amount of biscuit to each cupcake case and with the rolling pin lightly press down and then put them in the fridge for around 40 minutes.
To make the filling you are going to beat the cream cheese, icing sugar, vanilla extract and double cream together. Whisk the ingredients together until it becomes quite a stiff mixture. Take out your biscuit bases from the fridge and add the cheese filling on top of the biscuit base. Then it's the best part...decorating! You can decorate your mini cheesecakes however you want. I grated chocolate orange over all the cheesecakes and added chocolate chips. If you want a more healthier option you could add a strawberry to each one (don't forget to wash them). Then you are ready to serve your delicious mini cheesecakes!
