Rainbow Birthday Cake
Over the past couple of days I have made a birthday cake for my Grandad. Today I'm going to show you how to make this wonderful rainbow cake!
Ingredients:
For birthday cake
125g unsalted butter, softened
125g caster sugar
2 large eggs, beaten
125g self raising flour, sifted
2 tbsp semi-skimmed or whole milk
1 tsp vanilla extract
For the butter cream icing
75g unsalted butter, softened
2 tbsp semi-skimmed or whole milk
1 tsp vanilla extract
225g icing sugar, sifted
Food colouring, optional
Preparation time: 15 minutes
Cooking Time: 15-20 minutes
Cooling time: 20 minutes
Over temperature: 190 degrees celcius/ gas 5
Firstly, in a bowl beat the butter and sugar together till light and fluffy.
Whisk in 2 beaten eggs (1 at a time) and slowly add the flour! This is to prevent the mixture from curdling!
Using a metal spoon gently fold in remaining flour and then you are going to add the milk and the vanilla extract! (you don't need to use a lot of vanilla extract!)
Grease a large cake tin and gently fold in the mixture! Remember you will need to flatten the mixture out when it is in the cake tin so it rises correctly!

To make a rainbow cake, you have to repeat the process as many times as you want! For example, of you have the colours red,green and blue you have to repeat the process 3 times!
After the cakes have cooled lay them into a flat surface and place buttercream on top! Then put each cake on top of each other. For the fondant icing, I bought mine from a local store in the cake section! If you are going to add fondant icing roll it out as much as you can on a flat surface! Then with your hands lift fondant icing over the cake. (Remember you have to place fondant icing all over the cake.) Then you can add colourful icing on your cake! I bought the colours red and black and cut them out in shapes of stars and stuck them on the cake!
